Drumroaster – Edilma Piedrahita

This marks the second purchase of coffee from Edilma Piedrahita, founding member of the Los Guacharos collective based in Pitalito, the southern coffee-producing hub of Huila, Colombia.

Bourbon Aji is a mutation of Pink Bourbon—a variety that, despite its name, does not share direct bourbon lineage. It has recently gained attention for its expressive and distinctive flavour profile. The resulting cup is remarkably complex, with layered sweetness reminiscent of yellow tropical fruits and a bright, limoncello-like acidity and texture.
