Rooftop – Colombia, Los Guacharos

Los Guacharos brings together Pink Bourbon grown by Viviana Realpe, Jose Uribe Lasso and Luis Octavio in Bruselas, Huila. An anaerobic washed process develops the coffee’s fruit without sacrificing the clarity for which this variety is prized. Ripe strawberry provides the sweetness, Earl Grey tea adds a delicate floral character and blood orange gives the cup a bright, citrus finish. It is expressive and fruit-forward and beautifully composed.
