Rooftop – Costa Rica Centroamericano Co-Ferment

This is Aquiares at its most experimental, and Rooftop at its most playful. Part of the Cherry Bomb Series, this Centroamericano lot is co-fermented with a eucalyptus culture grown right on the farm; not for flavour, but to reshape the fermentation itself. The result is unexpected. No eucalyptus, just a lush, candy-like profile with notes of Laffy Taffy, pineapple, and lychee. It’s bright, expressive, and a little surreal, a coffee that leans into innovation without losing clarity.
