Santa Margarita is one of those farms where everything lines up. Set in Chimaltenango at 1640 MASL, the mix of Caturra, Sarchimor, Catimor, and Geisha brings both structure and depth, all shaped by careful washed processing and slow drying on patios and raised beds. Under Camila Topkeโs leadership, the farm runs with intention, from agroforestry practices to a team largely led by women across picking, grafting, and daily operations. Itโs a place where quality and care are built into the rhythm of the work.
In the cup, it leans rich and nostalgic in the best way. Molasses and dark chocolate lead, followed by toasted walnuts and a soft, buttery texture that rounds everything out. The body is full and steady, dialed for espresso but just as satisfying across the board. Classic, grounded, and deeply comforting, with a sweetness that lingers.
