Dak Coffee – Milky Cake

A coffee that lives up to its name. Milky Cake brings together vanilla cake sweetness, pistachio and fragrant cardamom, with a creamy texture and a honeyed finish. One of DAK’s bestsellers since 2021, it makes a distinctive filter coffee, a rich espresso and a particularly good companion to milk.

Grown at 1,920 metres at Finca El Paraíso in Colombia’s Cauca region, this Castillo owes its character to some very deliberate processing. The cherries undergo 72 hours of anaerobic fermentation with a milk-based culture, followed by a thermal shock wash and controlled drying. It’s a technically involved process with a deliciously approachable result.
