This Colombian Bourbon comes from Cat & Pierre at Cata Reserva and a community of producers working with them in Huila. Its festive character comes from co-fermentation with cinnamon, cardamom, mandarin and cherry, activated with yeast. Those fruits and spices are part of the processing itself, giving the coffee its distinctive holiday profile.
