Dak Coffee – Silky Way

Silky Way is the kind of coffee that explains why we wanted to bring Dak to Pedaal. It is an anaerobic-washed Pink Bourbon from Jhoan Vergara’s Las Flores farm in Colombia; bright, sparkling and unusually expressive, with crisp green apple, lemongrass and soft white florals. There is plenty happening here, but none of it gets in the way of the coffee itself. The fermentation adds complexity while the cup remains remarkably clean, elegant and easy to drink.
