Traffic Coffee – Steesuz

Paraneima is a variety that shows its range when it’s pushed in the right direction. Edin Ever Sabillon and Nery Martinez take it there in Las Flores, Santa Bárbara, splitting the work between washed and natural lots. Grown at 1200–1700 MASL, slower ripening builds layered sweetness and clarity, the kind of detail this region is known for when everything lines up.

In the cup, lime zest and a herbal, tea-like finish lead, something close to sage or thyme. The natural lot brings in dark fruit, sangria, and cacao nibs, adding depth and a rounded, lingering body. Bright, juicy, and textured, with enough movement in the glass to keep pulling attention back in.
