Traffic Coffee – Marcelo Anaerobic

Marcelo Assis and Flavio Silva produced this competition lot in Campos Altos, Brazil, using the increasingly celebrated Arara variety. The cherries undergo temperature-controlled anaerobic fermentation in stainless-steel tanks before being slowly dried on concrete patios, developing considerably more fruit and floral character than one might expect from a traditional Brazilian coffee. Orange wine brings a deep, complex sweetness, lemon verbena adds a fragrant citrus quality and ripe plum gives the cup its generous body. It is rich and intensely expressive, yet balanced enough for its unusual flavours to remain clear and distinct.
